I really love my pork chops, and this recipe for Pesto Pork is just perfect. If you have the time let the pork sit in the marinade for a while to really soak up the flavour. The other tip here is not to cook the pork for too long, on a medium/high heat (not easy on a griddle over a fire) cook the chops about 5-7 minutes each side depending on thickness. I served this one up for my mate with just some tinned chopped green beans… terrific!
